Strawberry & Cream Pie
Pastry
2 cups almonds
1 cup pecans
4-8 dates or until meal just sticks together
Almonds can be replaced with other combinations of nuts like pecans, hazel nuts, soaked pumpkin seeds.
Dates can be replaced with other dried fruits like apricots, sultanas, currants, dried cranberries, figs etc.
Filling
8 good sized bananas
3 punnets of strawberries
1 kiwi fruit
1 passion fruit
Sauce
3 frozen bananas
2 pieces dried mango
1 passion fruit
Directions
Pastry
Place nuts into processor and process until fine meal, add dates until meal just sticks together. Using fingers, push pastry into consistent layer into pie dish, include rim of pie dish. Place pie dish in dehydrator or moderate oven to warm.
Sauce
In processor blend 3-4 frozen bananas and mango to make a sauce, add passionfruit.
Filling
Cut rest of banana into long slices. Strawberries cut into slices. Layer the bananas into a star shape on bottom of pie dish with one pointed end to end against pie dish edge. Put layer of strawberries and half of sauce. Repeat. For top layer, place strawberries and banana in alternate circles with star kiwi fruit placed in middle.
Sprinkle with passion fruit.
